  1. In a medium bowl, combine the diced apples with lemon juice, brown sugar, ground cinnamon, cornstarch, and vanilla extract. Mix until the apples are well coated. Set aside for about 10-15 minutes.
  2. Heat the tortillas in a microwave for about 10-15 seconds to make them pliable. Optionally, lightly toast them in a dry skillet.
  3. Spoon about 2 tablespoons of the apple filling onto the lower third of each tortilla.
  4. Starting from the bottom, roll the tortilla tightly around the filling. Secure the edge with melted butter.
  5. Brush the tops lightly with melted butter.
  6. Preheat your air fryer to 375°F (190°C). Arrange the taquitos in a single layer in the basket and cook for 8-10 minutes, flipping halfway through.
  7. Mix together the granulated sugar and ground cinnamon in a small bowl.
  8. Once cooked, sprinkle the cinnamon sugar mixture over the tops of the taquitos while warm.
