  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder until well combined.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until smooth.
  4. Gradually add the wet ingredients to the dry mixture, stirring until just combined.
  5. Pour the batter into the prepared baking pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake cools, beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar and vanilla extract.
  7. Once the cake is completely cooled, crumble it into a large mixing bowl.
