Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar along with a pinch of salt. Mix until the crumbs are well-coated.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  5. Gradually add the granulated sugar while mixing. Beat in the eggs one at a time.
  6. Add sour cream, vanilla extract, and passion fruit puree. Mix until combined.
  7. Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
  8. Bake for 55-60 minutes, until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool for 1 hour.
  9. Refrigerate for at least 4 hours, preferably overnight.
  10. Spread the remaining passion fruit puree on top of the cheesecake and garnish with fresh passion fruit seeds if desired.
  11. Carefully remove the sides of the springform pan and slice the cheesecake into wedges.
