2 pounds ground beef (80/20 blend)
1 cup breadcrumbs (Italian or plain)
1/2 cup milk
1/2 cup ketchup (plus more for glazing)
1/4 cup finely chopped onion
2 large eggs
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika (optional)
Glaze Ingredients: 1/2 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon apple cider vinegar
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, 1/2 cup ketchup, onion, eggs, garlic, Worcestershire sauce, thyme, oregano, salt, black pepper, and smoked paprika. Mix gently with your hands until just combined.
Transfer the meat mixture to a lightly greased loaf pan and press down gently to shape.
In a small bowl, mix together 1/2 cup ketchup, brown sugar, and apple cider vinegar until well combined.
Spread a generous layer of the glaze over the top of the meatloaf.
Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).
Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing.
