Instructions

  1. In a medium bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth and well incorporated.
  2. Wash and slice the strawberries into bite-sized pieces. If using nuts, chop them finely. Set aside.
  3. In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  4. In a large mixing bowl, combine the yogurt mixture, sliced strawberries, and chopped nuts. Gently fold until the strawberries are evenly coated.
  5. Using a tablespoon or small scoop, drop spoonfuls of the yogurt and strawberry mixture onto a parchment-lined baking sheet.
  6. Using a spoon or a piping bag, drizzle the melted chocolate over each cluster.
  7. Place the baking sheet in the freezer for about 1-2 hours or until the clusters are firm.
  8. Once set, remove the clusters from the parchment paper and enjoy immediately or store in an airtight container in the freezer for up to 1 week.
