Ingredients
Scale:
2 cups white chocolate chips (high-quality for best results)
1 cup sweetened condensed milk
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup fresh raspberries (or frozen, thawed and drained)
1/4 cup additional white chocolate chips (for drizzling)
Fresh raspberries (for garnish, optional)
Instructions
Line an 8-inch square baking dish with parchment paper, allowing some overhang on the sides for easy removal later.
In a medium saucepan, combine the 2 cups of white chocolate chips and the sweetened condensed milk over low heat. Stir continuously until the chocolate is fully melted and the mixture is smooth, about 5-7 minutes.
Remove the saucepan from the heat, then stir in the vanilla extract and salt until evenly combined.
Gently fold in the fresh raspberries, being careful not to crush them too much.
Pour the fudge mixture into the prepared baking dish, spreading it evenly with a spatula.
Cover the dish with plastic wrap and refrigerate for at least 4 hours or until completely set.
Once the fudge has set, melt the 1/4 cup of additional white chocolate chips in the microwave and drizzle over the top of the fudge.
Use the parchment paper to lift the fudge out of the pan. Cut into squares and garnish with fresh raspberries if desired.
