1 pound ground beef, preferably 80/20
1 packet taco seasoning (about 1 ounce)
1 cup shredded cheddar cheese
1 cup refried beans (canned or homemade)
1/2 cup sour cream
1/4 cup diced onions (optional)
1 cup enchilada sauce
1 tablespoon taco sauce (optional)
4 large flour tortillas (10-12 inches)
Cooking spray or olive oil for grilling
Instructions
In a skillet over medium heat, cook the ground beef until browned, about 6-8 minutes.
Drain excess fat, if necessary, and stir in the taco seasoning and 2/3 cup of water. Simmer for about 5 minutes.
In a large bowl, combine the cooked beef, refried beans, half of the shredded cheddar cheese, sour cream, and onions (if using).
Lay a tortilla flat and spoon a generous amount of the beef mixture into the center.
Fold the sides of the tortilla over the filling, then roll from the bottom up to close tightly.
