4 boneless, skinless chicken breasts
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1/2 cup cream cheese, softened
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix together the chopped spinach, crumbled feta cheese, softened cream cheese, minced garlic, oregano, salt, and pepper until well combined.
Place the chicken breasts on a clean cutting board and create a pocket in each breast by cutting a slit in the side.
Generously fill each chicken breast pocket with the spinach and feta mixture.
Drizzle the olive oil over the st■ chicken breasts and season with additional salt and pepper if desired.
Place the st■ chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
In the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the chicken.
Once done, remove the chicken from the oven, let it rest for a few minutes, then garnish with fresh parsley before serving.
