A quick and tasty meal that packs a punch, combining savory ground beef with colorful bell peppers and a zesty garlic ginger sauce, all served over fluffy rice.

1 pound ground beef (85% lean)
1 large bell pepper, sliced (any color)
1 cup broccoli florets
1 medium carrot, thinly sliced
3 green onions, chopped (for garnish)
3 tablespoons soy sauce
2 tablespoons oyster sauce (optional)
1 tablespoon sesame oil
2 teaspoons chili paste (adjust to taste)
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 cups cooked rice (white or brown)
2 tablespoons vegetable oil (for frying)
Instructions
Cook 2 cups of rice according to package instructions. Fluff with a fork once done and set aside.
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
Add the ground beef to the pan. Cook for about 5-7 minutes, breaking it up with a spatula, until browned and cooked through.
Add the sliced bell pepper, broccoli florets, and carrot to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender yet crisp.
In a small bowl, combine soy sauce, oyster sauce (if using), sesame oil, chili paste, minced garlic, and ginger. Whisk together until well blended.
Pour the sauce mixture over the beef and vegetables. Stir well to coat everything evenly. Cook for an additional 2-3 minutes until everything is heated through.
Spoon the spicy ground beef stir-fry over the cooked rice. Garnish with chopped green onions and serve immediately.
