Southern cooked cabbage is a hearty and flavorful side dish that embodies the essence of southern comfort food. This dish, often prepared with a mix of spices and sometimes accompanied by bacon or sausage, provides a delightful balance of textures and tastes.

1 large head of green cabbage, cored and chopped (about 2-3 pounds)
1 large onion, diced
2 tablespoons olive oil or bacon grease
4 slices of bacon, chopped (optional)
2 cloves garlic, minced
Salt and pepper to taste
1 teaspoon sugar (optional)
1 teaspoon apple cider vinegar
1 teaspoon smoked paprika (optional)
1 teaspoon crushed red pepper flakes (optional)
Instructions
Start by removing the core from the cabbage and chop it into bite-sized pieces.
In a large pot or Dutch oven, heat over medium heat and add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and set aside.
In the same pot, add olive oil or the reserved bacon grease. Add the diced onions and sauté until translucent, about 4-5 minutes.
Stir in the minced garlic and cook for an additional 1-2 minutes.
Incorporate the chopped cabbage into the pot and stir well. Season with salt, pepper, and sugar if using.
Pour in about 1/2 cup of water or chicken broth. Bring to a gentle simmer. Cover and cook for 30-40 minutes, stirring occasionally.
Once cooked, stir in the apple cider vinegar and taste to adjust seasoning.
