1 cup rolled oats
1 cup all-purpose flour or gluten-free flour
1/2 cup brown sugar, packed
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted (or coconut oil for a vegan version)
2 cups fresh raspberries (or frozen, thawed and drained)
1/4 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
Instructions
Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish by greasing it thoroughly with butter or lining it with parchment paper.
In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt. Mix well.
Pour in the melted butter and stir until the mixture resembles coarse crumbs. Set aside about 1/2 cup for topping later.
In another bowl, gently toss the raspberries with granulated sugar, cornstarch, and lemon juice. Stir until the raspberries are well coated.
Press about two-thirds of the oatmeal mixture into the bottom of the prepared baking dish to form an even layer. Pour the raspberry filling over this crust.
Crumble the reserved oatmeal mixture on top of the raspberry layer.
Place in the preheated oven and bake for 30-35 minutes or until the top is golden brown.
Once baked, remove from the oven and let it cool in the pan for about 15 minutes. Refrigerate for an hour before slicing into bars.
