Ingredients

- 1 cup cottage cheese (preferably full-fat for creaminess)
- 3 large eggs, separated
- ¼ teaspoon cream of tartar
- 1 teaspoon garlic powder (optional)
- 1 teaspoon onion powder (optional)
- Salt, to taste
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a clean, dry mixing bowl, add the egg whites and cream of tartar. Beat the egg whites on high speed until stiff peaks form, about 3-5 minutes.
- In another bowl, combine the cottage cheese, egg yolks, garlic powder, onion powder, and salt. Mix until smooth.
- Gently fold a third of the whipped egg whites into the cottage cheese mixture. Continue to fold in the remaining egg whites until just combined.
- Using a spoon or cookie scoop, drop the mixture onto the prepared baking sheet, forming 6-8 mounds, about ½ inch thick.
- Bake for 25-30 minutes or until the tops are golden brown and the bread feels firm to the touch.
- Let the cloud bread cool on the baking sheet for a few minutes before transferring it to a wire rack to cool completely.
