Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, egg, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until just combined, taking care not to overwork the mixture to keep the patties tender.
  2. Shape the mixture into four equal patties, about 1/2 inch thick. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.
  3. Heat olive oil or butter in a large skillet over medium heat. Once hot, add the patties to the skillet and cook for about 4-5 minutes on each side, until they are browned and cooked through. Look for a nice caramelization on the outside for added flavor.
  4. Remove the patties from the skillet and set aside on a plate. Cover them to keep warm; this also allows the residual heat to finish cooking the insides.
  5. In the same skillet, add the sliced mushrooms and sauté for about 3-4 minutes, until they are tender and golden brown.
  6. Sprinkle the flour over the mushrooms and stir to combine. Cook for an additional minute to eliminate the raw flour taste, ensuring it becomes slightly golden for a deeper flavor.
  7. Gradually pour in the beef broth and soy sauce, stirring continuously to prevent lumps. Bring the mixture to a simmer over medium heat; the gravy will start to thicken as it cooks.
  8. Return the Salisbury steak patties to the skillet, cover, and let simmer for about 5 minutes, allowing the flavors to meld and the gravy to thicken nicely around the beef.
  9. Season the gravy with additional salt and pepper to taste before serving.
