1 ½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
3 ripe bananas, mashed (about 1 ½ cups)
½ cup granulated sugar
¼ cup brown sugar, packed
1 large egg, beaten
⅓ cup unsalted butter, melted
1 teaspoon vanilla extract
½ cup mini chocolate chips
Optional: Sliced bananas for garnish
Instructions
Preheat your oven to 350°F (175°C). Grease two mini loaf pans with cooking spray or butter, or line them with parchment paper for easier removal later.
In a medium mixing bowl, combine the flour, baking soda, baking powder, and salt. Whisk together until well combined.
In a large bowl, mash the ripe bananas with a fork until smooth.
Add the granulated sugar, brown sugar, beaten egg, melted butter, and vanilla extract to the mashed bananas. Stir until well mixed.
Gradually add the dry ingredients to the banana mixture, mixing gently.
Fold in the mini chocolate chips.
Pour the batter evenly into the prepared mini loaf pans, filling each about ¾ full. If desired, add a few slices of banana on top for decoration.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, allow the mini loaves to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
