  1. In a medium pot, bring salted water to a rolling boil. Add 1 cup of orzo pasta and cook according to package instructions, usually about 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
  2. While the orzo cooks, whisk together in a bowl the olive oil, lemon juice, minced garlic, Dijon mustard, salt, and pepper until well combined.
  3. Dice the cucumber, bell pepper, and red onion into small, even pieces. Halve the cherry tomatoes and roughly chop the spinach or arugula into bite-sized pieces.
  4. Once the orzo is cooked, drain it and rinse under cold water to stop the cooking process. In a large mixing bowl, combine the orzo, chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and spinach/arugula.
  5. Pour the lemon dressing over the orzo and vegetable mixture. Toss everything together until evenly coated.
  6. Gently fold in the crumbled feta cheese and Kalamata olives if using. Taste and adjust seasoning with additional salt, pepper, or lemon juice if desired.
  7. Top with fresh parsley or basil before serving. Enjoy chilled or at room temperature.
