  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  3. In a medium bowl, combine the grated parmesan cheese, almond flour, garlic powder, dried oregano, and paprika; mix well.
  4. Brush each cod fillet with olive oil on both sides.
  5. Generously sprinkle the parmesan mixture over the top of each cod fillet, pressing down lightly.
  6. Place the coated cod fillets on a baking sheet lined with parchment paper and bake for about 12-15 minutes.
  7. While the cod is baking, melt the butter in a small saucepan over medium heat, add the minced garlic, and sauté for 1-2 minutes.
  8. Remove the butter sauce from heat, stir in the lemon juice, and allow to cool slightly before serving.
  9. Once the cod is done, remove it from the oven and drizzle the garlic butter sauce over each fillet, garnishing with chopped parsley.
