2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup olive oil (extra virgin is preferred)
3 cloves garlic, minced
Juice of 1 lemon
1 tablespoon red wine vinegar
1 tablespoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Wooden or metal skewers
1 bell pepper, cut into 1-inch pieces (optional)
1 red onion, cut into wedges (optional)
Cherry tomatoes (optional)
Tzatziki sauce (store-bought or homemade)
Fresh parsley, chopped (for garnish)
Instructions
In a large mixing bowl, combine the olive oil, minced garlic, lemon juice, red wine vinegar, dried oregano, salt, and black pepper. Whisk until well blended.
Add the chicken cubes to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or ideally, overnight.
Preheat your grill to medium-high heat (about 400°F).
Thread the marinated chicken onto the skewers, alternating with bell pepper, red onion, and cherry tomatoes.
Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is golden brown and reaches an internal temperature of 165°F.
Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve with tzatziki sauce and a sprinkle of fresh parsley.
