  1. In a medium mixing bowl, combine the creamy peanut butter and powdered sugar. Stir until fully incorporated and smooth.
  2. Add the crushed Butterfinger bars and vanilla extract to the mixture, folding gently until evenly distributed.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter. Place on a baking sheet lined with parchment paper.
  4. Chill the formed balls in the freezer for at least 30 minutes.
  5. Prepare the chocolate coating by combining the semi-sweet chocolate chips and coconut oil in a microwave-safe bowl.
  6. Microwave the chocolate in 30-second intervals, stirring in between, until melted and smooth.
  7. Remove the chilled Butterfinger balls from the freezer. Dip each ball into the melted chocolate, ensuring it is completely coated.
  8. Place the coated balls back on the parchment-lined baking sheet. Sprinkle with crushed Butterfinger bars or sea salt if desired.
  9. Allow the chocolate to set at room temperature or in the freezer for about 10 minutes.
