2 cups plain Greek yogurt (preferably full-fat or 2%)
1 cup fresh blueberries (or frozen, thawed and drained)
2 tablespoons honey or maple syrup (adjust to taste)
1 teaspoon vanilla extract
1/4 cup granola (optional)
2 tablespoons shredded coconut (unsweetened, optional)
Chopped nuts (optional)
Instructions
In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk until smooth and well combined.
Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the yogurt mixture.
Using a spoon or a small ice cream scoop, portion the yogurt mixture into silicone molds or mini muffin tins, filling each mold about 3/4 full.
If desired, sprinkle granola, shredded coconut, or chopped nuts on top of each yogurt bite for added texture and flavor.
Place the filled molds in the freezer for at least 4 hours or until completely frozen.
Once frozen, remove the yogurt bites from the molds. If difficult, run warm water over the outside of the molds to loosen them up.
Place the Healthy Blueberry Greek Yogurt Bites in an airtight container or a resealable plastic bag, and store them in the freezer for up to 2 months.
