4 medium zucchinis
1 pound ground turkey
1 small onion, finely chopped
2 cloves garlic, minced
1 cup diced tomatoes (fresh or canned)
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon paprika
Salt and pepper to taste
1 cup shredded mozzarella cheese (optional for topping)
Fresh parsley, chopped (for garnish)
Red pepper flakes (optional for a spicy kick)
Instructions
Preheat your oven to 375°F (190°C).
Prepare the zucchinis by cutting them in half lengthwise and scooping out the seeds.
In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent.
Add the minced garlic and sauté for another minute until fragrant.
Add the ground turkey to the skillet and cook until browned.
Stir in the diced tomatoes, reserved zucchini flesh, oregano, basil, paprika, salt, and pepper. Simmer for about 5-10 minutes.
Spoon the turkey mixture into each zucchini boat, filling them generously.
