Ground Beef Quesadillas

  1. In a skillet over medium heat, add the ground beef. Cook for about 5-7 minutes, stirring occasionally, until browned and fully cooked. Drain any excess fat from the skillet.
  2. Add taco seasoning to the beef, along with 1/4 cup of water. Stir well to combine and let simmer for about 3-4 minutes until the mixture thickens.
  3. In a clean skillet, heat 1 tablespoon of olive oil over medium heat. Place one tortilla in the skillet.
  4. Spread 1/4 of the beef mixture over half of the tortilla, topping it with cheddar and Monterey Jack cheese.
  5. Fold the tortilla in half and cook for about 2-3 minutes or until the bottom is golden brown.
  6. Flip the quesadilla and add another tablespoon of olive oil if needed. Cook for an additional 2-3 minutes until the other side is golden brown.
  7. Remove from the skillet, let cool for a minute, and slice into wedges. Repeat the process with remaining tortillas and filling.
