1 pound ground beef
1 teaspoon taco seasoning
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
4 large flour tortillas (10-inch)
2 tablespoons olive oil
1 cup guacamole
1 cup sour cream
1 cup salsa
Chopped cilantro for garnish
Sliced jalapeños (optional)
Instructions
In a skillet over medium heat, add the ground beef. Cook for about 5-7 minutes, stirring occasionally, until browned and fully cooked. Drain any excess fat from the skillet.
Add taco seasoning to the beef, along with 1/4 cup of water. Stir well to combine and let simmer for about 3-4 minutes until the mixture thickens.
In a clean skillet, heat 1 tablespoon of olive oil over medium heat. Place one tortilla in the skillet.
Spread 1/4 of the beef mixture over half of the tortilla, topping it with cheddar and Monterey Jack cheese.
Fold the tortilla in half and cook for about 2-3 minutes or until the bottom is golden brown.
Flip the quesadilla and add another tablespoon of olive oil if needed. Cook for an additional 2-3 minutes until the other side is golden brown.
Remove from the skillet, let cool for a minute, and slice into wedges. Repeat the process with remaining tortillas and filling.
