1 pound of spicy Italian sausage, cut into 1-inch slices
1 pound of smoked sausage, cut into 1-inch slices
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into half-moons
1 red onion, cut into wedges
1 cup cherry tomatoes, whole
1/4 cup olive oil, preferably extra virgin
2 tablespoons balsamic vinegar
2 teaspoons garlic powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
Salt and pepper, to taste
Metal or wooden skewers (if using wooden, soak in water for 30 minutes before grilling)
Instructions
In a bowl, whisk together olive oil, balsamic vinegar, garlic powder, smoked paprika, dried oregano, salt, and pepper until well combined.
Place the sliced sausages in a resealable plastic bag or a large bowl. Pour the marinade over the sausages, ensuring they are evenly coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.
While the sausages are marinating, prepare the vegetables by washing and cutting them into appropriate sizes.
Thread the marinated sausage and vegetable ingredients onto the skewers, alternating between sausage and vegetables.
Preheat your grill to medium-high heat (about 400°F).
Place the assembled kabobs on the grill. Cook for about 10-15 minutes, turning occasionally, until the sausages are browned and cooked through and the vegetables are tender.
Remove the kabobs from the grill and let them rest for a few minutes before serving.
