Ingredients
Scale:
1 lb ground beef (preferably lean)
1 tablespoon olive oil (extra virgin recommended)
1 small onion, finely chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
1 cup cooked quinoa or rice
Fresh vegetables for topping: chopped cucumbers, tomatoes, and red onion
1 cup Greek yogurt
1 small cucumber, grated and excess water squeezed out
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
1 garlic clove, minced (for tzatziki)
Salt to taste (for tzatziki)
Instructions
Prepare the Tzatziki Sauce: In a medium bowl, combine the Greek yogurt, grated cucumber, dill, lemon juice, minced garlic, and salt. Mix until well combined. Cover and refrigerate for at least 30 minutes.
Cook the Ground Beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic, oregano, cumin, paprika, salt, and pepper. Stir for another minute.
Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
Assemble the Bowls: In serving bowls, layer cooked quinoa or rice as the base. Spoon the cooked ground beef mixture over the grains.
Top with fresh vegetables such as chopped cucumbers, tomatoes, and red onions.
Drizzle with tzatziki sauce or serve it on the side.
