  1. In a mixing bowl, combine the finely chopped pecans, graham cracker crumbs, powdered sugar, cocoa powder, and salt. Stir until evenly mixed.
  2. Add the maple syrup and vanilla extract to the dry ingredients. Mix well until the mixture is sticky and holds together.
  3. Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the rolled balls on a parchment-lined baking sheet.
  4. Once all the mixture is rolled into balls, refrigerate the balls for at least 30 minutes to firm up.
  5. If you are opting for the chocolate coating, melt the chocolate chips with the coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  6. Dip each chilled pecan ball into the melted chocolate, ensuring it's fully coated. Use a fork to lift it out, allowing excess chocolate to drip off.
