Ingredients
Scale:
9 large lasagna noodles
2 cups cooked chicken, shredded
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
3 tablespoons unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1/2 cup grated parmesan cheese (for sauce)
1/4 teaspoon red pepper flakes (optional)
1/2 cup shredded mozzarella cheese (for topping)
Fresh parsley, chopped (for garnishing)
Instructions
Cook the lasagna noodles: Bring a large pot of salted water to a rolling boil. Cook the lasagna noodles according to the package instructions, usually about 8-10 minutes, until they are al dente. Drain the noodles and lay them flat on a clean kitchen towel to prevent sticking.
Prepare the chicken mixture: In a large bowl, combine the cooked chicken, ricotta cheese, mozzarella cheese, grated parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
Make the garlic sauce: In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer and let it cook for 4-5 minutes. Stir in the grated parmesan cheese and season with salt, pepper, and red pepper flakes.
Assemble the roll-ups: Preheat your oven to 375°F (190°C). Spread a thin layer of the garlic sauce at the bottom of a 9x13-inch baking dish. Take one lasagna noodle and spoon about 1/4 cup of the chicken mixture onto it. Roll it up tightly and place seam-side down in the baking dish. Repeat with the remaining noodles and filling.
Add more sauce: Pour the remaining garlic sauce evenly over the roll-ups. Sprinkle the top with shredded mozzarella cheese.
Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
Garnish and serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley and serve warm.
