Frozen Yogurt Granola Cups with Berries

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Stir until evenly coated.
  3. Line a muffin tin with parchment paper or silicone liners. Evenly distribute the granola mixture into each muffin cup, pressing it firmly to form a cup shape.
  4. Bake in the preheated oven for about 15 minutes, or until the edges are golden brown. Let it cool completely on a wire rack.
  5. In a separate bowl, mix the Greek yogurt with honey (or agave syrup) until smooth.
  6. Once the granola cups are cooled, fill each cup with the yogurt mixture, smoothing the top.
  7. Top each yogurt-filled cup with mixed fresh berries. Optional: sprinkle with shredded coconut or chocolate chips.
  8. Place the assembled granola cups in the freezer for at least 2 hours, or until the yogurt is firm.
  9. Once frozen, enjoy immediately or let them sit at room temperature for easier removal from the liners.
