2 cups fresh raspberries, washed and dried
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon gelatin (optional)
1 cup heavy whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla extract
8 ounces cream cheese, softened
Additional fresh raspberries for garnish
Mint leaves (optional)
Chocolate shavings (optional)
Instructions
In a medium bowl, combine the fresh raspberries, granulated sugar, and lemon juice. Gently mash the raspberries with a fork until slightly crushed. If using gelatin, dissolve it in warm water and add to the raspberry mixture. Let sit for about 10 minutes.
In a separate bowl, beat the heavy whipping cream on medium speed until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
In another bowl, beat the softened cream cheese until smooth. Gently fold the whipped cream into the cream cheese until fully combined.
In serving glasses, layer the raspberry mixture and cream mixture. Finish with the cream layer on top.
Cover with plastic wrap and refrigerate for at least 2 hours to allow the layers to set.
Garnish with fresh raspberries, mint leaves, and chocolate shavings before serving.
