  1. In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the sliced onions and stir well to coat. Cook for about 20-25 minutes, stirring occasionally, until the onions are golden brown and caramelized.
  2. Once the onions are caramelized, add the minced garlic and thyme to the pot. Cook for an additional 2 minutes, stirring frequently until the garlic is fragrant.
  3. Add the rice to the pot and stir to mix with the onion and garlic. Toast the rice for about 2-3 minutes.
  4. Pour in the beef broth and season with salt and pepper to taste. Stir well and bring the mixture to a gentle boil.
