Delicious grilled chicken skewers marinated in a flavorful barbecue sauce, perfect for summer gatherings.

1 cup barbecue sauce
2 tablespoons olive oil
2 tablespoons apple cider vinegar
2 teaspoons garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
1 ½ pounds boneless, skinless chicken breast, cut into 1-inch cubes
1 bell pepper (red or green), cut into 1-inch pieces
1 red onion, cut into wedges
Wooden or metal skewers
Instructions
In a large bowl, combine the barbecue sauce, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper. Whisk until well blended.
Add the chicken cubes to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.
Preheat your grill to medium-high heat (about 375°F to 400°F).
While the grill heats up, prepare the skewers. Thread the marinated chicken, bell pepper, and onion onto the skewers, alternating as desired, until all ingredients are used.
Once the grill is ready, place the skewers on the grill. Cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. (The internal temperature should reach 165°F.)
Remove from the grill and let rest for a few minutes before serving. Brush with additional barbecue sauce, if desired.
