  1. Rinse sushi rice under cold water until clear. Cook rice with water in a rice cooker or pot according to instructions.
  2. Mix rice vinegar, sugar, and salt in a bowl until dissolved. Fold into cooked rice gently.
  3. In a bowl, combine crab meat, cream cheese, mayonnaise, sriracha, sesame oil, and green onion. Mix until creamy.
  4. Preheat oven to 350°F (175°C).
  5. Spread seasoned rice in a greased 9x13-inch baking dish, then layer crab mixture on top.
  6. Sprinkle mozzarella cheese over the crab layer.
  7. Bake for 20-25 minutes until cheese is melted and bubbly. Broil for 2-3 minutes for a crispy top if desired.
