  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined and the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of serving cups to form a crust and refrigerate for 30 minutes.
  3. In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. In a separate bowl, whip the heavy cream to stiff peaks.
  5. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Layer the cheesecake filling over the crust in each cup and top with mixed berries. Garnish with mint leaves if desired. Chill for at least 2 hours before serving.
