2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ cup butter, cold and cubed
1 cup heavy cream for dough and additional for serving
1 teaspoon vanilla extract
1 pre-made tart shell
1 cup pastry cream or vanilla pudding
2 cups fresh strawberries, halved or sliced
¼ cup apricot jam
Instructions
No-Bake Strawberry Cheesecake: Combine graham cracker crumbs and melted butter in a bowl, press into a springform pan, refrigerate for 30 mins. Beat cream cheese, add powdered sugar and vanilla. Whip heavy cream, fold into cream cheese mix, add strawberry puree, pour into crust, refrigerate for 4 hours, top with sliced strawberries.
Strawberry Mousse: Blend sliced strawberries, lemon juice, and sugar until smooth. Bloom gelatin in water, dissolve, mix with strawberry puree. Whip heavy cream, fold in strawberry mix, pour into glasses, chill for 2 hours.
Strawberry Shortcake Alternatives: Macerate strawberries with sugar for 30 mins. Preheat oven to 425°F. Mix flour, baking powder, salt; cut in butter. Add cream and vanilla, stir. Roll dough, cut into rounds, bake for 12-15 mins. Assemble with whipped cream and macerated strawberries.
Simple Strawberry Tart: Bake tart shell, let cool. Fill with pastry cream, arrange strawberries, brush with warm apricot jam, chill for 30 mins.
