A quick, crispy, and utterly delicious snack perfect for game day, parties, or a cozy night in.

1 bag (about 10 ounces) of tortilla chips
2 cups shredded cheddar cheese
1 cup milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
1 can (15 ounces) black beans, drained and rinsed
1 cup diced tomatoes
1 jalapeño, sliced
1 avocado, diced
½ cup sour cream
¼ cup sliced green onions
Fresh cilantro leaves for garnish
1 cup cooked ground beef or shredded chicken (optional)
Instructions
In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes until slightly golden.
Gradually pour in the milk while continuously whisking to avoid lumps. Continue cooking for about 3-5 minutes until the mixture thickens.
Lower the heat and gradually add the shredded cheddar cheese, stirring until melted and smooth. Season with garlic powder, onion powder, smoked paprika, salt, and pepper to taste.
If you’re making baked nachos, preheat your oven to 350°F (175°C).
On a large baking sheet or oven-safe platter, spread out the crispy tortilla chips evenly. Drizzle half of the nacho cheese sauce over the chips.
Layer the black beans, diced tomatoes, jalapeños, and cooked meat (if using) over the chips. Drizzle the remaining cheese sauce on top.
If you prefer baked nachos, place the assembled nachos in the preheated oven and bake for 10-12 minutes.
Remove from the oven (if baked) and top with diced avocado, sour cream, green onions, and fresh cilantro.
Serve your easy nachos while they’re hot and fresh.
