Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. This typically takes about 8-10 minutes. Stir occasionally to prevent sticking. Once cooked, reserve 1 cup of pasta water and drain the rest.
  2. Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Add More Veggies: Add the diced zucchini and bell pepper to the skillet, cooking for about 3-4 minutes, until slightly tender. Then, stir in the corn and halved cherry tomatoes. Cook for an additional 5 minutes.
  4. Mix Everything Together: Once the vegetables are cooked, add the drained pasta to the skillet. Toss everything together, and add a bit of the reserved pasta water to create a light sauce.
  5. Finish with Spinach and Seasoning: Stir in the fresh spinach and chopped basil leaves. Season with red pepper flakes, salt, and pepper to taste. Cook for an additional 2 minutes until the spinach wilts.
  6. Serve: Plate the pasta in serving bowls and garnish with freshly grated Parmesan cheese and extra basil leaves if desired.
