Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together the olive oil, soy sauce, honey, Dijon mustard, lemon juice, garlic powder, paprika, salt, and pepper until well combined.
  2. Marinate the Salmon: Place the salmon fillets in a shallow dish or resealable plastic bag and pour the marinade over them. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Make the Mango Salsa: In a bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Stir gently to mix and taste to adjust seasoning if necessary.
  4. Preheat the Grill: Preheat your grill to medium-high heat (about 400°F to 450°F). Oil the grates to prevent sticking.
  5. Grill the Salmon: Remove the salmon from the marinade and grill for about 6-8 minutes on one side, then flip and grill for another 4-6 minutes, or until cooked through.
  6. Serve: Once done, remove the salmon from the grill and let it rest for a few minutes. Top each fillet generously with the mango salsa before serving.
