2 cups shredded cooked chicken
1 cup sour cream

8-10 corn tortillas

Prepare the Homemade Enchilada Sauce: In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add 2 tablespoons of flour, whisking continuously for about 1 minute until it forms a roux.
Gradually pour in 2 cups of chicken broth while whisking to avoid lumps. Stir in 1 cup of green salsa and 1 teaspoon of ground cumin. Bring to a simmer and let it cook for about 5 minutes, or until slightly thickened.
Combine the Filling: In a large bowl, mix 2 cups of shredded chicken, 1 cup of sour cream, ½ cup of shredded cheese, 1 can of diced green chiles, 1 teaspoon cumin, and ½ teaspoon garlic powder, along with salt and pepper to taste until well combined.
Preheat the Oven: Preheat your oven to 350°F (175°C) while you assemble the enchiladas.
Assemble the Enchiladas: Spread a thin layer of the homemade enchilada sauce on the bottom of a 9x13 inch baking dish. Take a corn tortilla, fill it with about 2 tablespoons of the chicken mixture, roll it up tightly, and place it seam-side down in the dish.
Top the Enchiladas: Once all tortillas are in the dish, pour the remaining enchilada sauce evenly over the top. Sprinkle the rest of the shredded cheese on top.
