1 bag (10 oz) Doritos (Nacho Cheese or Cool Ranch)
1 lb ground beef (or turkey for a lighter option)
1 packet taco seasoning
1 cup cherry tomatoes, halved
1 cup shredded lettuce
1 cup black beans, drained and rinsed
1 cup corn (fresh, frozen, or canned)
1 cup shredded cheese (cheddar or Mexican blend)
1 avocado, diced
1/2 cup green onions, sliced
1/2 cup sour cream
1/4 cup salsa
1 tablespoon lime juice
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
In a large skillet over medium heat, brown the ground beef (or turkey) until fully cooked, about 5-7 minutes. Drain excess grease.
Stir in the taco seasoning, following the package instructions. Simmer until thickened, about 3-5 minutes.
In a bowl, combine sour cream, salsa, lime juice, garlic powder, salt, and pepper. Whisk until smooth.
Dice the avocado, slice the green onions, and halve the cherry tomatoes.
In a large mixing bowl, combine the cooked meat, shredded lettuce, black beans, corn, cherry tomatoes, and shredded cheese. Toss gently.
Pour the dressing over the salad mixture and toss gently to coat.
Crush the Doritos and sprinkle over the salad just before serving.
Garnish with diced avocado and sliced green onions.
