  1. In a large bowl, mix together the flour, salt, and sugar. Add the cold, cubed butter and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
  3. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat your oven to 400°F (200°C).
  5. In a medium bowl, combine the fresh berries, sugar, cornstarch, vanilla extract, and lemon juice. Gently mix the ingredients together.
  6. On a lightly floured surface, roll out the chilled dough into a 12-inch circle.
  7. Carefully transfer the rolled-out dough to a parchment-lined baking sheet.
  8. Spoon the berry mixture into the center of the dough, leaving a 2-inch border around the edges.
