8 ounces of penne or rotini pasta
Salt, for boiling water (about 1 tablespoon for the pasta water)
1 pound of ground beef
1 medium onion, diced
3 cloves of garlic, minced
1 can (14.5 ounces) of diced tomatoes, undrained
1 cup of beef broth
1 teaspoon of Italian seasoning
Salt and pepper, to taste
1 cup of heavy cream
1/2 cup of grated Parmesan cheese
1 tablespoon of olive oil
Fresh parsley, chopped, for garnish
Additional grated Parmesan cheese, for serving
Instructions
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Once done, drain and set aside, reserving about 1/2 cup of the pasta water.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
Add the ground beef to the skillet. Cook, breaking it apart with a wooden spoon, until browned, about 6-8 minutes. Drain excess fat if necessary.
Stir in the diced tomatoes (with their juice) and beef broth. Sprinkle in the Italian seasoning and season with salt and pepper to taste. Bring to a simmer and let cook for about 5 minutes.
Reduce heat to low, then slowly stir in the heavy cream and Parmesan cheese, mixing well until the sauce is creamy.
Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. Cook for an additional 2-3 minutes.
Remove from heat and garnish with parsley and additional grated Parmesan cheese. Serve hot.
