1 cup all-purpose flour, sifted
1/4 cup granulated sugar
1/4 teaspoon salt
1/2 cup unsalted butter, cubed
1/2 cup water
4 large eggs, at room temperature
1 teaspoon vanilla extract
1 cup powdered sugar, sifted
2 tablespoons fresh strawberry puree
1 tablespoon milk or water
1/2 teaspoon vanilla extract for glaze
Vegetable oil for deep frying
Instructions
In a medium saucepan, combine the water, butter, sugar, and salt. Bring to a boil over medium heat.
Remove from heat and stir in the flour until it forms a ball.
Allow to cool slightly, then add eggs one at a time, mixing well after each addition.
Heat vegetable oil to 350°F (175°C) in a deep pot.
Transfer the dough to a piping bag and pipe 4-5 inch long crullers onto a baking sheet.
Fry crullers for 3-4 minutes until golden brown, then drain on paper towels.
In a bowl, mix powdered sugar, strawberry puree, milk, and vanilla extract until smooth.
Dip cooled crullers in the glaze and place on a wire rack to set.
