Ingredients
Scale:
1 cup rolled oats
1/2 cup almond flour
1/2 cup vanilla protein powder
1/4 cup powdered erythritol
1/2 teaspoon salt
1/2 cup creamy almond butter
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1/4 cup fresh strawberries, pureed
1/4 cup crushed walnuts or almonds (optional)
Additional strawberry pieces for garnish (optional)
Instructions
Prepare the Strawberries: Start by washing and hulling about 1/4 cup of fresh strawberries. Puree them in a blender or food processor until smooth, which should take about 30 seconds. Set aside.
Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, vanilla protein powder, powdered erythritol, and salt. Stir until well mixed.
Add Wet Ingredients: In a separate bowl, mix together the creamy almond butter, unsweetened applesauce, vanilla extract, and pureed strawberries. Whisk until smooth.
Combine Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Mix thoroughly until all ingredients are evenly incorporated and a sticky dough forms.
Form the Balls: With clean hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is shaped into balls.
Chill the Protein Balls: Place the protein balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
Store or Serve: Once chilled, enjoy your strawberry cheesecake protein balls immediately or store them in an airtight container for up to a week.
