Ingredients
Scale:
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
1 teaspoon vanilla extract
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups whipped topping (or whipped cream)
1 teaspoon ground cinnamon
¼ cup granulated sugar (for topping)
1 teaspoon ground cinnamon (for topping)
1 cup mini churros, broken into pieces
Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until the crumbs are fully coated.
Firmly press the crust mixture into the bottom of a 9x9-inch baking dish. Bake in the preheated oven for 10 minutes, or until lightly golden. Remove from the oven and allow to cool completely.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and mix until fully incorporated. Add the vanilla extract and ground cinnamon, then fold in the whipped topping gently.
Pour the cheesecake filling over the cooled crust and smooth it into an even layer. Refrigerate for at least 4 hours, or until the cheesecake is set.
In a small bowl, mix together the granulated sugar and ground cinnamon. Sprinkle this mixture evenly over the set cheesecake filling, then top with the broken mini churro pieces.
Return the dessert to the refrigerator and let it chill for an additional 30 minutes to an hour.
Once chilled, cut the churro cheesecake bars into squares. Serve them chilled or at room temperature.
