2 pounds boneless, skinless chicken breasts
4 cups chicken broth
1 medium onion, diced
2 cups carrots, sliced
2 cups celery, diced
1 teaspoon garlic powder
1 teaspoon onion powder (optional)
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and black pepper, to taste
1 cup heavy cream
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon dried parsley (optional)
1 cup milk
1/4 cup unsalted butter, melted
Instructions
Prepare the crockpot: Spray the inside of your slow cooker with non-stick cooking spray for easy cleanup.
Add the chicken breasts to the crockpot, then pour in the chicken broth.
Stir in the diced onion, sliced carrots, and diced celery.
Season with garlic powder, onion powder, dried thyme, dried rosemary, salt, and black pepper. Mix well.
Cover the crockpot and set it to low heat for 6-8 hours or high heat for 3-4 hours.
About 30 minutes before serving, remove the chicken and shred it using two forks.
In a separate bowl, prepare the dumpling batter by mixing flour, baking powder, salt, and dried parsley (if using). Gradually stir in milk and melted butter until just combined.
Drop spoonfuls of the dumpling batter over the chicken and stew mixture in the crockpot. Cover and cook on high for an additional 30 minutes.
Once done, gently stir the dumplings into the chicken and stew mixture. Stir in the heavy cream and serve hot.
