1 can (15 oz) chicken broth (low sodium recommended)
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley or chives, chopped (for serving)
Instructions
Prepare the Slow Cooker: Spray the inside of your crockpot with non-stick cooking spray or use a liner for easy cleanup.
Layer the Ingredients: Place the chicken breasts at the bottom of the slow cooker. Season them with garlic powder, onion powder, paprika, salt, and pepper.
Add Rice and Vegetables: Pour the uncooked rice evenly over the chicken. Add the frozen mixed vegetables on top of the rice.
Mix the Sauce: In a separate bowl, combine the cream of chicken soup and chicken broth. Stir until well mixed.
Pour the Sauce: Carefully pour the soup mixture over the chicken, rice, and vegetables.
Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
Add Cheese: During the last 15 minutes of cooking, sprinkle the shredded cheddar cheese over the top.
Serve: Once done, shred the chicken directly in the pot and stir everything together. Garnish with fresh parsley or chives.
