1 lb ground beef, preferably 80/20
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
2 tablespoons olive oil
6 large flour tortillas
Vegetable oil for frying

Instructions
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and garlic, sautéing until the onions are translucent, about 3-4 minutes.
Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, approximately 6-8 minutes. Drain any excess fat.
Stir in the cumin, chili powder, salt, and pepper, ensuring the spices are well combined. Taste the filling and adjust the seasoning if necessary.
Lay a tortilla flat on a clean surface. Place about 1/3 cup of the beef filling in the center, followed by a generous sprinkle of both cheeses.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to create a burrito shape.
In a deep pan or fryer, heat about 2 inches of vegetable oil to 350°F (175°C). Carefully place the chimichangas seam-side down in the hot oil.
