Ingredients
Scale:
1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 cup heavy whipping cream
1 teaspoon vanilla extract
1 cup pistachios, shelled and finely chopped
2 tablespoons lemon juice
½ cup whipped cream (optional)
Chopped pistachios for garnish
Pistachio paste or syrup (optional, for drizzling)
Instructions
In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.
Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
Add the powdered sugar and vanilla extract to the cream cheese. Mix until fluffy, approximately 2 minutes.
In a separate bowl, whip the heavy cream until stiff peaks form, about 3-5 minutes. Gently fold into the cream cheese mixture.
Stir in the finely chopped pistachios and lemon juice until evenly distributed.
Pour the cheesecake filling over the chilled graham cracker crust and smooth the top.
Cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
Once set, carefully remove the cheesecake from the springform pan and top with whipped cream, additional chopped pistachios, and pistachio paste if desired.
