  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, salt, pepper, thyme, rosemary, and minced garlic to create a marinade.
  3. Rinse the chicken under cold water and pat it dry with paper towels.
  4. Rub the marinade all over the chicken, ensuring it gets under the skin and inside the cavity.
  5. Stuff the cavity of the chicken with the halved lemon.
  6. Place the chicken in a roasting pan, breast-side up, and tuck the wing tips under its body.
  7. In a small saucepan, combine cranberries, maple syrup, apple cider vinegar, Dijon mustard, and cinnamon. Cook over medium heat until the cranberries burst, about 5-7 minutes.
  8. Pour half of the glaze over the chicken, reserving the other half for basting later.
  9. Roast the chicken in the preheated oven for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  10. Baste the chicken with the reserved cranberry maple glaze every 20 minutes.
  11. Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
