1 pound ground turkey
1 cup cottage cheese
1 large bell pepper, diced
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
1 tablespoon lemon juice (optional)
Chopped fresh parsley or basil for garnish (optional)
Grated Parmesan cheese (optional)
Instructions
In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until it becomes translucent and softens.
Add the minced garlic and sauté for an additional minute until fragrant.
Increase the heat to medium-high, then add the ground turkey to the skillet. Cook while breaking it apart with a spatula, about 5-7 minutes, or until the turkey is browned and cooked through.
Stir in the diced bell pepper, Italian seasoning, paprika, salt, and pepper. Cook for another 3-4 minutes until the peppers soften.
Lower the heat to medium and gently stir in the cottage cheese until well combined. Allow it to heat through for about 2 minutes.
If using, drizzle lemon juice over the top, and mix well.
Remove from heat and sprinkle with fresh herbs and grated Parmesan cheese, if desired. Serve hot.
