Ingredients
Scale:
3 cups all-purpose flour
1 cup bread flour
1 tablespoon salt
1 tablespoon brown sugar
1 teaspoon chipotle powder (adjust to taste)
1/2 teaspoon active dry yeast
1 1/2 cups water (room temperature)
6 strips of cooked bacon, chopped (preferably thick-cut)
1 tablespoon olive oil (for greasing)
Instructions
In a large mixing bowl, combine the all-purpose flour, bread flour, salt, brown sugar, chipotle powder, and active dry yeast. Stir together until well blended.
Slowly pour in the water, using a wooden spoon or your hands to mix until a shaggy dough forms.
Cover the bowl with a clean kitchen towel and let the dough rest for 30 minutes.
Knead the dough in the bowl or on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
Gently fold in the chopped bacon, ensuring even distribution throughout the dough.
Place the dough in a greased bowl (using olive oil) and cover it. Let it rise at room temperature for about 4-8 hours, or until doubled in size.
Once risen, gently deflate the dough on a lightly floured surface and shape it into a round or oval loaf.
Place the shaped dough onto a floured proofing basket or bowl, seam side up. Cover it and allow it to rise for an additional 1-2 hours.
Preheat your oven to 450°F (232°C) about 30 minutes before baking.
Carefully transfer the dough onto parchment paper and score the top with a sharp knife if desired. Use the parchment paper to lift the dough into the preheated Dutch oven. Cover and bake for 30 minutes, then remove the lid and bake for an additional 15-20 minutes until the crust is golden brown.
Once baked, transfer the bread to a wire rack to cool completely before slicing.
