Ingredients
Scale:
1 pound (450g) cooked chicken, shredded
1 cup (120g) all-purpose flour (or gluten-free flour)
1/2 cup (50g) shredded cheese (cheddar or mozzarella)
1/2 cup (120ml) milk
2 large eggs
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup (15g) fresh herbs (optional)
1 cup (150g) vegetables (optional)
Vegetable oil (for pan-frying)
Dip of your choice (like ranch, hot sauce, or sweet chili sauce)
Instructions
In a large mixing bowl, combine the shredded chicken, flour, cheese, baking powder, salt, pepper, garlic powder, and onion powder. Mix well to evenly distribute all dry ingredients.
In a separate bowl, whisk together the eggs and milk until fully combined. Pour this wet mixture into the dry mixture and stir until just combined.
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
Using a tablespoon or a small ice cream scoop, drop heaping spoonfuls of the batter into the hot oil.
Cook the fritters for about 3-4 minutes on each side, or until they turn golden brown and crispy.
Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.
Serve the chicken fritters warm with your favorite dipping sauce.
